Le Colonial’s Chef Deetz has worked as a chef/restaurateur for more than 30 years starting at age 17 as the head chef at Le Pique Nique French deli in Oakland. He subsequently became the owner/chef at Spettro, Luna Piena, Calaca and the Dragonfly Tea House. In 2000 he moved to Vietnam and spent the next 17 years opening and operating a dozen restaurants, many with his wife Quynh Nhu, plus doing consulting and curating visits by the likes of celebrity chef Gordon Ramsey and food writers Alan Richman and Dori Greenspan. One of his venues CNN.com called one of the top restaurants to eat at in the world. In 2017 Deetz and Nhu came to the United States to open The Temple Club in Oakland that showcased “truly authentic” Vietnamese cuisine and was named a “Top 100 Restaurant” by the San Francisco Chronicle and received GQ Magazine’s “Best Noodle Dish in America” designation, two of many local and national accolades.
